About Olmo
Olmo Bagels, established in 2018, have given New Haven its own style of bagel to be proud of. Made from fresh grains, these treats have evolved into a product even New Yorkers choose over their own style of bagel.
What makes them different? Grains and process. We use 82% high extraction or bolted grains milled by Ground Up in Holyoke, MA to give our bagel depth of flavor. We also boil our bagels using steam only! We find this gives them a crisper crust and helps the seeds stick better.
Our Story
Olmo, meaning Elm Tree, was originally a high-end sit down restaurant featuring local farms and a seasonal menu. The small dining room was not conducive to a global pandemic… The owners quickly pivoted the restaurant into a bagel shop, knowing that New Haven, the Elm City, was a bagel desert. As the line grew longer, the pivot back to a sit down restaurant became unrealistic.

Plucky, creative, and ambitious, our team is picked based on personality first, as we believe the skills needed to be successful at Olmo can be taught by each other.
Everyone is welcomed with respect, and mutually driven by the desire to better not only the restaurant, but also themselves.
Each member of Team Olmo is determined to be part of the nation’s top #PBT - we represent New Haven as the city’s premiere professional bagel team.
Charity & Community
Since becoming a bagel shop - Olmo donates more to its community than before.
The credo “Everyone Deserves a Bagel” is a part of the food insecurity solution in New Haven as Olmo donated roughly $20,000 in bagels in 2022 to Haven’s Harvest.
